Ingredients

6 eachSweet Potato
4 sheetsFrozen Phyllo Dough
2 tbspMaple Syrup
1 tspCinnamon
2 tbspAlmond Butter (smooth)
1 tbspGrape Seed Oil

Directions

  1. Defrost the phyllo in the fridge at least an hour ahead of time. This can be done overnight as well.
  2. Preheat the oven to 375 degrees F.
  3. Wash the sweet potatoes well, dry, and then place on a baking sheet in the oven for about 60 to 70 minutes until very soft. Allow to cool.
  4. Lower the oven to 350 degrees F.
  5. Remove the skins from the sweet potatoes, discard. Place the sweet potato in a food processor with maple syrup, cinnamon, and almond butter. Puree until very smooth.
  6. Drizzle some oil in between each sheet of phyllo, and layer on top of on another. Fit it into a pie or cake pan.
  7. Spoon in the puree sweet potato. Bake for about 15 minutes. Allow to cool, serve warm or chilled.

·         Fibre is part of the plant that your body cannot breakdown. There are 2 kinds: soluble and insoluble. Soluble fibre soaks up water and slows you’re your bowel movement while insoluble fibre does not take in water and speeds up.  

 

·         Aim to eat soluble fibre and be sure to remove the insoluble fibre (skins, seeds and membranes) from vegetables and fruit.
