Firm Tofu, diced
2 cups
Mixed Mushrooms, roughly chopped
1/4 cup
Fresh Mint, thinly sliced
1 clove
Garlic, thinly sliced
1 tbsp
Lemon Juice
2 tbsp
Sunflower or Sesame Seeds, toasted
1 tbsp
Walnut or Olive Oil
1/2 tsp
Sea Salt and Freshly Ground Black Pepper

Cooking Directions
Preheat the oven to 340 degrees F.
Cut a large piece of parchment paper, fold in half.
Mix the tofu, mushrooms, garlic, oil, salt and pepper. Pile in the middle of half of your parchment. Fold to top half over and crimp the edges to create a seal.
Transfer parchment packages on a baking sheet into the oven and cook for about 20 minutes.
Carefully open the packages, top with fresh mint, lemon juice and toasted seeds.
