White Beans

Flour (any flour will work)

Parmesan Cheese

Fresh Herbs, finely chopped (parsley, basil, mint etc.)
Mushroom Sauce
2 cups
Mixed Fresh Mushrooms, roughly chopped
2 cloves
Garlic

Lemon, juice and zest

Bell Pepper, sliced

Olive Oil
1/2 tsp
Sea Salt and Freshly Ground Black Pepper
Directions
Cooking Directions
Mash the beans with a fork, or potato masher until as smooth as possible.
Put into a bowl with flour, crack in an egg, add parmesan cheese and fresh herbs.
Mix well until you get a soft ball of dough. Refrigerate for 20 minutes.
Roll out on a floured surface until about ½ inch thick. Cut strips lengthwise, and then cross those strips to create small squares (about ¾ inch).
(optional) to get those signature gnocchi grooves, using one finger, gently roll each gnocchi up the grooves of a fork and let it drop.
Place all the gnocchi on a baking sheet lined with parchment paper and freeze until use.
To cook gnocchi, add to boiling water for 3 minutes or until they start to float.
For a quick mushroom sauce, in a large saute pan over medium heat. Add olive. Add mushrooms, making sure not to overcrowd them. Let them sit and cook for 5 minutes, until you see the water evaporate. Add the garlic and peppers. Stir and cook another 5 minutes. Finish with salt, pepper, lemon juice and lemon zest. Add the gnocchi, toss and serve.
