Cardamom French Toast
8 slices
Day Old Bread (any bread will work), 1" thick slices
1 cup
Milk
3
Eggs
1 tsp
Pure Vanilla Extract
1/4 tsp
Ground Cardamom
1/2 tsp
Ground Cinnamon
1 tsp
Honey or Maple Syrup
2 tsp
Grape Seed Oil
Mango & Lime Chutney
2 cups
Mango, diced
1
Lime, juice and zest
1
Vanilla Pod, scraped (or 1/2 tsp Pure Vanilla Extract)
1 tbsp
Honey or Maple Syrup

Cooking Directions
For the mango and lime chutney, combine the mango, lime juice, lime zest, vanilla pod scrapings and honey in a small pot. Place over medium heat and cook, stirring occasionally, until the mango begins to soften, about 15 minutes.
Combine the milk, eggs, vanilla extract, cardamom, cinnamon and honey in a bowl and whisk until light and airy.
Heat a sauté pan over medium heat, and add some of your grape seed oil.
Soak the bread in your egg mixture and transfer to the hot pan. Cook on both sides until golden brown.
Serve a piece of French toast with a spoonful of mango chutney.

Cardamom is part of the ginger family. It is traditionally believed to help digestion, and is used in traditional Eastern medicine to relieve an upset stomach or reduce bloating and gas.
A study on the effects of cardamom in 20 patients with high blood pressure showed that taking 3 grams (1 1/2 teaspoons) of ground cardamom every day for 12 weeks reduced blood pressure.
Studies on cardamom and cancer have not yet been done in humans. However, a study in mice showed that the animals fed cardamom were less likely to develop skin cancer and pre-cancerous tumours than the mice not given cardamom.
