Ingredients

1 cupMixed Fruit (Jack Fruit, Kiwis, Strawberries, Mango, etc.), finely chopped
1/4 cupEvaporated Milk or Coconut Milk
1 cupCooked Red Beans (Adzuki Beans, Kidney, or Mung Beans)
1 cupShaved Ice
1 tspPure Vanilla Extract (or 1 Vanilla Pod)
2 tbspHoney

Directions

  1. ​For the sweet red beans, add cooked beans to a small pot with 2 tbsp of honey and the vanilla. If you are using a whole vanilla pod, scrape the seeds out of the pod and add them to the pot. Simmer on medium low for about 10 minutes, stirring well. Refrigerate for about 30 minutes.
  2. Add about 2 tbsp of the beans to the bottom of a cup, add a few tbsp of your fruit, and top with a few tbsp of shaved ice. Drizzle with some coconut milk and serve. Stir well before eating.

  • Coconut milk is high in calories, providing 550 calories in 1 cup. Most of the calories are in the form of saturated fat. While the type of saturated fat in coconuts is in the form of medium chain triglycerides, which differs from the type found in red meat, more research is needed before we can determine the health impact of coconut milk. Until then, enjoy this calorie-rich food in moderation.
