2 cups
Vegetables (carrots, cukes, baby onions, beets, garlic, hot peppers...), whole or cut into 2 inch pieces
1 1/2 cup
Apple Cider or White Vinegar
1 cup
Water
1 tbsp
Sugar
1/4 cup
Fresh Dill or Fennel Tops
1 tsp
Kosher Salt
2 tbsp
Pickling Spices (bay leaves, mustard seed, dill seed, coriander seed, black peppercorns, chili flakes, all spice)
Directions
Cooking Directions
Place the vinegar, water, sugar, salt and pickling spices in a medium sauce pot and bring to a boil. Reduce heat to low and simmer for about 10 minutes.
Place your vegetables and fresh herbs in your sanitized mason jar. Carfully pour your pickling brine over the vegetables allowing about a 1/2 inch of space from the top of the jar. Seal tightly and allow to cool.
Store your jar of pickled vegetables in the refridgerator. They will last about 2 months.
