Pumpkin or Squash, graed (or 1 cup pureed)

Vegetable or Chicken Stock
1 cup
Whole or Skim Milk or Milk Alternative
2 cloves
Garlic, minced
1 tbsp
Curry Powder
1 1/2 tbsp
All Purpose Flour
3/4 cup
Sharp or Smoked Cheddar, grated

Whole Wheat or Spelt Macaroni
1 1/2 tbsp
Olive Oil
½ tsp
Sea Salt and Freshly Ground Black Pepper
Topping
1/4 cup
Parmesan Cheese
1/4 cup
Breadcrumbs
2 tbsp
Pumpkin Seeds
2 tsp
Dried Thyme
Directions
Cooking Directions
Cook your pasta according to the box instructions, drain and set aside.
In a medium sauce pot over medium heat, add 1 ½ tbsp of olive oil and stir in the flour until well combine together.
Add the curry powder and garlic and continue to stir and good until it gets slightly darker. About 3 minutes.
Add the stock, milk and pumpkin. Stir well and bring to a simmer. Cook for about 15 minutes. Stir in the cheese.
If you want the sauce creamy, blend until smooth. Add to your cooked pasta.
Place in a baking dish and top with the bread crumbs. Place under the broiler in your oven for a few minutes until golden brown.
