Ingredients

6 eachBoneless Chicken Thighs
50g (1/2 cup)Egg Noodles
1/2 cupOnion, finely chopped
2 clovesGarlic, finely chopped
2 cupsMushrooms, sliced
1 tbspFlour​
1/4 cupDried Mushrooms (shiitake or porcini)
1 tbspMarmite (you can also substitute with miso pate or a stock cube)
3 sprigsThyme (optional)
1/2 tspSalt


Directions

  1. Preheat the oven to 350 F.
  2. In a glass jar or large measuring jug, add dried mushrooms and marmite. Cover with 2 cups of boiling water. Stir and set aside.
  3. In an oven proof pan, over medium high heat, add oil.
  4. Season chicken thighs on both sides with salt. Add to your preheated pan, skin side down, cook for about 1 minutes or until you start to get some golden colour. Flip and cook the other side for about 1 minutes. Remove from the pan and set aside.
  5. Reduce heat to medium. Add onion and garlic to your pan and stir. Sprinkle flour over top and continue to stir and cook until it starts to become fragrent and you develop a little colour in the pan.
  6. Add your mushrooms, a pinch of salt, stir through and cook until the mushrooms have softened. Pour in your mushroom/marmite broth, scrapping the bottom of the pan with a wooden spoon.
  7. Add the chicken thighs back into the pan, cover with lid or foil and plan into the oven. Bake for about 45 minutes or until the thighs are bery tender.
  8. Stir noodles into the pan, cover and place back into the oven to cook until soft (follow cooking instructions on the package.).
  9. Remove from the over and serve, spooning some of the sauce over top.

  • ​​Chicken is a good quality protein that is rich in B-vitamins, selenium and phosphorous. The combination of these nutrients is ideal for preserving muscle mass, improving bone strength, and supporting the immune system. All of which are important for recovery from cancer treatment.
  • If you find it difficult to chew and swallow chicken, you may find it easier to eat the chicken thighs in this recipe since they are cooked in a liquid, which helps make it very soft and moist. Other protein foods you could use in this recipe that are easier to chew and swallow, include any type of meatballs made from ground chicken, ground pork or ground beef. If you follow a vegetarian diet, you could even use any vegetarian soy ‘meatballs’ in this recipe. 
  • If you find that foods taste bland, try adding additional flavour to foods by adding herbs, seasonings, and strong flavoured condiments. For example, the marmite that is added to the sauce provides a very strong savory or umami flavour. Adding the thyme to this dish also adds an additional element of flavour to the meal.
