3 cloves
Garlic
3 cups
Fresh or Frozen Greens (kale, spinach, chard etc.)
1 cup
Parsley
1/2 cup
Small Shaped Pasta (i.e. ditalini, elbow)
1 can
Chickpeas, drained and rinsed
2 1/2 tbsp
Olive Oil
4 cups
Boiling Water
1/2
Lemon
1/2 tsp
Sea Salt and Ground Black Pepper
Directions
Cooking Directions
In a soup pot over medium heat, add olive oil.
Add crushed garlic and slowly cook until lightly browned.
Add your greens and parsley and stir through.
Cover with boiling water from your kettle.
Use a hand blender and blend until smooth.
Add pasta and chickpeas. Simmer until the pasta is cooked, about 15 minutes.
Taste and season. Squeeze the juice from half a lemon and serve.
(optional) Garnish with grated parmesan and chili flakes.
