Boneless Chicken Breast, butterflied in half
1/2 cup
Fresh or Frozen Mango, sliced
1/2 cup
Red Pepper, thinly sliced
1/2 cup
Red Onion, thinly sliced

Lime Juice
1/4 cup
Cilantro or Parsley, roughly chopped
2 tbsp
Olive Oil
1/2 tsp
Salt & Black Pepper

Preheat the oven to 400 degrees F.
Cut two large pieces of parchment paper, fold each in half. In the middle of half of your parchment, add half your mango, peppers and onion, top with piece of chicken. Mix olive oil, lime juice, cilantro and pinch of salt. Pour over top your chicken.
Fold the top half of parchment over and crimp the edges to create a seal. Transfer parchment packages on a baking sheet into the oven and cook for about 18-20 minutes. Cook until thickest part of the chicken reads 165 degrees F. Top with a little squeeze of lime juice.
