Unbleached All Purpose Flour
3/4 cup
Mung Bean Flour (or other bean flour)
3/4 cup
Milk
1
Egg
1 1/2 cup
Blueberries (fresh or frozen)
1/2 cup
Maple Syrup or Honey
1 tbsp
Matcha Powder
1/2 tsp
Cinnamon
1 tbsp
Baking Powder
1/4 tsp
Salt
Directions
Cooking Directions
Preheat oven to 375 degrees F
Combine milk, egg, and maple syrup in one bowl.
Mix flours, cinnamon, baking powder, matcha and salt in another bowl.
Slowly mix the dry ingredients into the wet until well combined.
Gently stir in the blueberries.
Pour batter into greased cake tin or individually as muffins.
Bake for 30 minutes, or until lightly golden brown. (a toothpick inserted into the center should come out dry.
