Ingredients

2 clovesGarlic, crushed
1 smallOnion, roughly chopped
2 cupsCarrots, peeled and roughly chopped
6 cupsVegetable or Chicken Broth
4 tbspTahini or any nut butter
1 block (about 400g)Silken Tofu
3 tbspOlive Oil
To TasteSalt


Directions

  1. Wash hands before beginning preparation. Thoroughly clean and sanitize surfaces and equipment.
  2. Add onion and garlic, cook about 2 minutes, just until soft. Do not get any colour. If it starts to caramelize quickly, lower the heat.
  3. Add carrots and stir through. Add broth. Bring to a boil, reduce heat to low and cover. Simmer about 15 – 20 minutes or until the carrots are soft and can easily be crushed under very little pressure from a fork.
  4. Blend the soup with silken tofu and tahini until super smooth.
  5. (optional) Add a scoop of your favourite protein powder if needed.
  6. (Mildly Thick Fluid Texture) Blend soup with more broth if needed to reach desired thickness. Pass through a tamis or fine mesh sieve to remove any solids.

Nutrition


  • T​ahini is made of ground sesame seeds, making it a great source of protein, healthy fats and fiber. It is usually found in the international section of the grocery store and does not need to be refrigerated. You can substitute the tahini with other nut butters like peanut, sunflower or almond.
  • Silken Tofu is the other source of protein in this recipe. The "silken" part of the name refers to the texture, which is very smooth. It has a very neutral taste and can be heated or blended straight out of the package into a smoothie to boost the protein in a recipe or create a smoother texture.
