Water or Chicken Broth or Bone Broth

Apple, peeled and cored, and cut into large pieces
2 each (about 500g)
Chicken Breast, boneless and skinless, cut into large pieces
2 tbsp
Oyster Sauce (optional)
2 tbsp
Olive Oil or your preferred vegetable oil
1/4 cup
(garnish optional) Chives or Green Onion, finely chopped
2 tbsp
(garnish optional) Sesame Oil

Cooking Directions
Wash hands before beginning preparation. Thoroughly clean and sanitize surfaces and equipment.
Combine chicken with oyster sauce and oil, mix well and set aside.
Rinse millet under running water. And then add to a large pot. Cover with your broth or water. Bring up to a boil.
Reduce heat to low, and simmer. Add chicken and apple. Cover and cook about 30 minutes. Lifting to stir occasionally, about every 5 minutes so that the millet does not stick to the bottom.
Once the millet is soft and cooked through, remove from the heat. Remove ginger and season to taste. Top with garnish (optional)
(Mildly Thick Fluid Texture) Blend porridge with more broth if needed to reach desired thickness. Pass through a tamis or fine mesh sieve to remove any solids.

u can try using rice instead of the millet. Same process, just cook until the rice easily falls apart.
For extra calories, try topping the porridge with some extra sesame or olive oil.
Bone broth is rich in protein, unlike vegetable, chicken or beef broths which are very low in protein and calories. It is a great dairy free way to boost the protein in a soup or stew. You can buy bone broth in a carton, or in a powder or you can make bone broth at home by boiling chicken bones until they are soft (6-8 hours).
Millet is a whole grain rich in energy, protein and fiber. It also cooks quickly without gelling, which makes it great for blending. You can find millet in grocery stores (natural foods aisle, international aisle) or at a bulk food store.
