Ingredients

3 mediumRipe Pears, cored and roughly chopped
1 cupCucumber, peeled
1/2 cupBread, crusts removed
1 1/2 cupsVegetable Broth or Water
1/4 cupAlmonds
1 tbspFresh Ginger
2 tbspLemon Juice or Vinegar
1 cupFresh Thyme or other fresh herbs
1 tbspEdamame or other canned beans
2 tbspOlive Oil
To TasteSea Salt and Black Pepper

Directions

  1. In a bowl, mix pears, cucumber, bread, almonds, ginger, lemon juice, fresh thyme, olive oil, salt and pepper. Mix well and let sit for about 5 minutes.
  2. If using frozen edamame, blanch in boiling water until tender. Add to ice water before draining. Season to taste and set aside.
  3. Add pear mixture to blender and blend until smooth. Add a little more liquid if needed. Refrigerate mixture and serve chilled. Top with seasoned edamame and dice pear..
