Ripe Pears, cored and roughly chopped
1 cup
Cucumber, peeled
1/2 cup
Bread, crusts removed
1 1/2 cups
Vegetable Broth or Water
1/4 cup
Almonds
1 tbsp
Fresh Ginger
2 tbsp
Lemon Juice or Vinegar
1 cup
Fresh Thyme or other fresh herbs
1 tbsp
Edamame or other canned beans
2 tbsp
Olive Oil
To Taste
Sea Salt and Black Pepper
Directions
Cooking Directions
In a bowl, mix pears, cucumber, bread, almonds, ginger, lemon juice, fresh thyme, olive oil, salt and pepper. Mix well and let sit for about 5 minutes.
If using frozen edamame, blanch in boiling water until tender. Add to ice water before draining. Season to taste and set aside.
Add pear mixture to blender and blend until smooth. Add a little more liquid if needed. Refrigerate mixture and serve chilled. Top with seasoned edamame and dice pear..
